Girl Scout Cookies Have Arrived!

im a sucker for thin mints & tagalongs!  i cant resist them at all so as soon as i knew i could order them, i did!  honestly, i didnt care about points or weight when i wrote the check.  however, after the damage was done, i became secretly very nervous about how i would behave when i had them in my hands.  well, they are here and i can say that i am super proud of myself so far!  i havent touched a cookie because i want to wait for the weekend.  i like to use my weekly points on the weekends and when i do indulge, i will need those weekly points! :)  i was also very happy when i pointed them out and learned that they point out quite well; 4 thin mints are 4 points, 2 tagalongs are 4 points, and 4 dulce de leche are 4 points.  thats not too shabby at all! :)

spaghetti w/chicken & peas in alfredo sauce
2 oz trader joe's organic pasta spaghetti
4 oz trader joe's organic free range chicken, cubed
1/4 cup trader joe's alfredo sauce
1/2 cup frozen peas
2 cloves garlic, minces
2 tbsp onions, chopped finely
italian seasonings
  • spray a frying pan with trader joe's italian olive oil spray (frying pan has been on medium-low heat for a few minutes) & cook the chicken, garlic, and onions.  add seasoning.
  • when chicken is cooked, add peas.  cook until peas are defrosted.
  • add alfredo sauce.  cook together for about 2-3 minutes on low heat.
  • mix with cooked spaghetti

 the soup is fantastic as well!  a great find!

im definitely on my way to figuring out how to make this faux pizza yummy!!  this time i included the alfredo sauce & it helped significantly! :)

faux pizza (modified based on a hungry-girl recipe called "crispy white pizza")
1 flatout light italian herb (flat bread)
4oz trader joes ground beef 96/4
2 tbsp chopped onions
3 cloves minced garlic
1/4 cup & 2 tbsp trader joes fat free ricotta cheese
2 tbsp trader joes lite shredded mozzarella cheese

2 tbsp trader joes alfredo sauce
italian seasoning
garlic & herb seasoning

  • preheat ove to 375 degrees
  • spray a baking sheet with trader joe's italian olive oil spray.  place flatout on the sheet and bake for 5 minutes.  flip flatout and bake for another 5 minutes.
  • spray a frying pan with trader joe's italian olive oil spray (frying pan has been on medium-low heat for a few minutes).  cook the onions & garlic for a minute.  add ground beef & cook completely while chopping meat up into small pieces.
  • combine cheeses, alfredo sauce, seasonings, meat w/onion & garlic.  the heat from meat will melt the cheeses to a spreadable consistency.   spread on baked flatout.
  • put back in oven for another 5 minutes.

broccoli bake
frozen broccoli defrosted & cut into bite size pieces
2 tbsp progresso bread crumbs italian style
1 tbsp trader joe's parmesan, romano & asiago cheese mix
italian seasoning
garlic & herb seasoning
 

  • preheat oven to 375 degrees
  • layer the bottom of a pyrex with the broccoli
  • sprinkle bread crumbs, cheese, and seasonings
  • bake covered for about 20-25 minutes

tuesday was a boring eating day.  i had a board meeting at 7 and wanted some down time prior to the meeting so i decided to keep dinner super easy & quick.....which means boring! :)
